Live Solefully:: Day 18 ~ Have a Plan

18 Oct

So It’s Tuesday the second full week of October and I’m finally feeling like I’ve got my groove back on with planning meals, the kids daily routine and my own work/fitness routines.  We have two more weeks of our farm share and since this is our 4th year participating I know what is coming for sure…squashes, potatoes, carrots  and any root veggies you can think of.  So many of my recipes center around those items.  A few of the dinner I will make two and freeze one for another dinner.

Here’s what’s on the menu this week… Enjoy!

“T” for Tuesday

12 Apr

Hello everyone!  I’m back with the 10th addition of Tantalizing Tuesdays!  Wow- that’s over 50 recipes I have shared with all of you. I hope your trying some of these and that they help planning your weekly meals.   This week I have been wracking my brain on what to make.  I’m in between spring cooking mode and late winter cooking mode.  However it was 75 degrees here yesterday.  Everyone was out and about walking, running, biking, driving with the windows down, convertibles open I knew I had to change some of my recipes.  With that said, my menu changed a little bit.  I added a hint of spring and lighter foods.  The poached eggs with spinach is a great “go-to” meal for lunch or dinner.  The brown rice pudding is my favorite health conscious comfort food.  This dessert is made with soy milk and is a super healthy treat for those raw damp spring days.

Tantalizing Tuesday ~Week5

1 Mar

Hello my blog reading friends!  I wasn’t sure if I’d get this one out this week.  It’s slightly hectic around here as I prep to leave for my trip to California and my first marathon whoo hoo! Excited yes.  But planning to get myself there and have my children settled prior to me leaving has me thinking… Is all this prep really worth it?  Yes it will be!  Anyway this week my recipes focus around items that you can make and freeze.  All of the items listed I made for my MIL so she could feed the kiddies while we were away!   {There are only 4 recipes and 1 sweet treat this week, because that’s all were gone for,  and she’s going to take them for pizza etc, like Memeres (French for grandma) like to do!}

Resolve to Eat Breakfast!

13 Jan

I just love this time of year. Why you ask because as a dietitian I see people looking to take charge of their health and fitness goals. Unfortunately only 20% of people who make resolutions/goals, keep them. That means 80% of us fail. ((depressing right)) :(   However I think a lot of our success and failure rate has to do with the pressure we put on ourselves to achieve our unrealistic goals.

My theory to my clients is that “slow and steady wins the race”. This is lifestyle change, that doesn’t happen overnight. If you make small changes and aim for success, then building upon that 1 success is easier.

Lets be honest there’s no quick fix. If there was we’d all be taking it or doing it. It takes conscious, consistent effort.

Today your goal should be to eat breakfast. If you’re skipping breakfast your missing an opportunity to rev your metabolism. When we go 8-12 hours without eating the body thinks it’s starving. Then the next time you do eat the body says “well I’m not sure when your going to feed me again, so I’ll store this as fat”. Eating breakfast is the most important thing you can do. CONSISTENTLY- everyday!
So what is a healthy breakfast?
You need some carbs “good ones” which I’ll discuss another day, and protein.
Here’s a few quick breakfasts…
I love Hodgson Mill multi-grain hot cereal with milled flaxseed and soy. You can make it in the microwave in less than 3 minutes! I add a 2 Tbs raisins and grab a lowfat cheese stick.

I also love chobani vanilla yogurt, with 1/2c blueberries, 2 tsp honey, and 1/4c dried uncooked oatmeal mixed in (yes uncooked, it’s great).  The greek yogurt packs a punch with protein, so no need to add additional protein.
I also love an - english muffin, with lowfat cottage cheese – 1/4c on each half, tomato and avacado on top! YUM!

We make our children eat breakfast why don’t we? What your favorite breakfast?
